  • 2 dried ancho chiles
  • 1 medium onion, chopped
  • 4 cloves of garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano

  • ½ teaspoon cinnamon
  • Salt and pepper, to taste
  • 4 cups beef broth
  • 1 tablespoon apple cider vinegar
  • 2 bay leaves
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Corn tortillas, for serving

Instructions

Follow these simple steps to create your incredible Birria Crock Pot dish:

  1. Prepare Chiles: Remove the stems and seeds from the guajillo and ancho chiles. Heat them in a dry skillet over medium heat until fragrant, about 2-3 minutes.
  2. Blend Sauce: Place the toasted chiles into a blender with 1 cup of beef broth, minced garlic, chopped onion, cumin, oregano, coriander, smoked paprika, cinnamon, salt, and pepper. Blend until smooth.
  3. Season the Meat: Cut the beef chuck roast into large chunks. Season with salt and pepper.
  4. Add to Crock Pot: Place the beef chunks in the crock pot, and pour the blended sauce over the meat.
  5. Add Remaining Ingredients: Pour in the remaining beef broth, add apple cider vinegar, and toss in the bay leaves. Stir gently to combine.
  6. Set Cooking Time: Cover the crock pot and cook on low for 8 hours or on high for 4 hours, until the meat is tender and falls apart easily.
  7. Shred the Meat: Once cooked, remove the meat from the crock pot and shred using two forks. Return the shredded meat to the pot and stir to combine with the broth.
  8. Taste and Adjust: Taste the birria and adjust seasoning if necessary, adding more salt or spices as needed.
